Thought I'd share my ambitious Xmas Eve menu from today :
Plaintain pancakes, boiled eggs & fresh fruit (served with vanilla green tea) for brunch
crab dip with tortilla chips & vegetable crackers as an appetizer (served with cosmos) recipe : http://allrecipes.com/Recipe/Warm-Crab-Dip-II/Detail.aspx
seared scallops on arugula with goat cheese & balsamic vinaigrette
Seafarer's Slow Cooker chowder made with salt cod & market fresh shrimps & veggies - served with rosemary toasts (made with 1/2 & 1/2 instead of whipping cream, so a little watery but still very flavorful)
Wine : Cuvee Clemence entre-deux mers 2006 (an oaky white, a little too oaky but drinkable)
Cheese (gouda & maybe some peppered goat or white cheddar), chicken terrine, rosemary crackers, fruit & chocolates accompanied by Warre's Optima 10 yr old Port
All was successful so far, minus the undercooked, too chewy scallops that I had to reheat in the microwave. Last course still to be had in about an hr!

I meant Otima (the port) & not Optima - I brought the rest to Ottawa for our Boxing Day celebration cuz I didn't want to keep an open bottle too long in the fridge - it quickly got slurped up - truly the best port I've ever tasted, worth a try if u like that stuff! Hope your Xmas was good!
