flank you very much

I think, most days, we take for granted that we have such a gorgeous balcony and the opportunity to grill. Unfortunately, my in-laws are not as lucky and frequently long for the smoky taste of grilled meat.

A few weeks back my mother-in-law bought a generous piece of flank steak and threw it in the freezer. Her idea was to grill it in her grill pan, hoping that it would come close to the taste of a beautifully grilled steak. After a few weeks, she realized that the only way to enjoy the flank steak would be to get someone else to grill it for her. That's where I step in.

I marinated the hefty piece of meat the day before hoping that the marinade would tenderize the meat. Flank steak is known for being tough if not cooked correctly and I was worried that I would ruin the lunch we had planned. There's nothing worse then chewing (and chewing) on overcooked, tough beef. I'm happy to say that the lunch was a success, and the meat was as tender and flavourful as I had hoped. Flank steak will definitely be put on our list of grilled meats for the summer months...and this marinade certainly passes the test.

BBQ Flank Steak
2 lbs flank steak (also known as London broil)
1/4 cup soy sauce
2 tbls honey
2 tbls red wine vinegar
4 garlic cloves (minced)
1/2 tsp ginger (grated)
1 cup green onions
1/2 cup vegetable oil

Combine all ingredients and let sit for over 24 hours refrigerated. Flip meat a few times to distribute marinade evenly.

Grill on medium-high heat for approx. 10 minutes for medium-rare.

It was fantastic. I enjoyed the lunch immensely along with the company. The Flank steak was cooked to perfection.

We thank you so very much for a wonderful lunch on your balcony, every thing was delicious, the steak was tender and very flavorful, the berry tart was sinfully decadent !!!
