happy hour

The perfect summer drink - especially on hot, and humid days like today.

Mojito

1 teaspoon sugar
Juice from 1 lime (2 ounces)
4 mint leaves
1 sprig of mint
Rum (2 ounces)
Club soda


Place the mint leaves into a tall glass and squeeze the juice from a cut lime over it. You'll want about two ounces of lime juice, so it may not require all of the juice from a single lime. Add the sugar, then gently smash the mint into the lime juice and sugar with a muddler (you can also use the back of a fork or spoon if one isn't available). Add ice (preferably crushed) then add the rum and stir, and top off with the club soda (you can also mix the club soda in as per your taste). Garnish with a mint sprig and lime.


And repeat.

the recipe we used called for a lot more mint - some people in our group found them too minty, but for me, there can never be too much mint!

I love mojitos but I've found that when I use sugar, it ends up settling at the bottom of the glass when I spend too much time savoring it! Consider substituting the sugar with an ounce or two of homemade simple syrup (equal parts water and sugar dissolved over low heat). This dispurses the sweetness evenly throughout!

I went the simple syrup route too... I even made mint simple syrup. I just boiled some mint while make the syrup. Worked great! Have the sugar does make it easier to muddle though. It works as an abrasive.

You can change it a little and add Raspberries instead of lime juice and you have a Raspberry mojito- also very yummy.
