'two minutes flat' salad

In the time it took me to turn off the bbq, remove the chicken kebabs and get back into the house, Dina prepared a side dish for tonight's main course.

Some leftover feta cheese, parsley, pepper, extra virgin olive oil, and a squeeze of lemon juice for good measure and we had a tasty little salad to match with the chicken skewers.

A variation you could try: any cheese you have in the fridge, cubed up, tossed with some olives, capers, chopped parsley, s&p and some good olive oil.

looks delicious, wasn't the salad too salty with the feta cheese?

There is no additional salt added to the salad and so the parsley balances out the feta. Also, we use Canadian feta which is naturally less salty compared to the Greek version.

This looks wonderful, but I might be biased. Feta is a reason to live in and of itself!
