Okay, so we're a day late....but we've got the right idea. May 5th is Mexican Independance Day and everyone is a bit latin on Cinco de Mayo. To celebrate we decided to make fish taco's.
Let me give you a bit of background to this post....Mony went to Seattle 4 years ago on business. He came back raving about the city and especially a memorable lunch he had at a little Mexican restaurant near Pike Place. He had (for the first time) fish taco's. And ever since then, he brings up this meal about twice a year. Tonight I decided to win some points by recreating this memory.
I started by making some homemade salsa. Yes, it would be easier to just run out to the store and buy a bottle of El Paso, but then would I ever be able to say that I made homemade salsa?? It was easy and tasty...just chopped tomatoes, garlic, coriander, a bit of onion, and mexican inspired spices like cumin, salt, black pepper, and chili flakes.
Guacamole also made a special addition. I used the typical ingredients....avocado, tomato, onion, garlic, and lime juice. S&P to taste.
Wait for it.....

mmmmm...we ate authentic fish tacos almost everyday on our honeymoon in Mexico....did u debone & descale the fish yourself or do you have them do that 4u when you buy the fish? I always avoid cooking whole fish for that reason, I hate the cleaning!
We tell the fish market people to clean and scale the fish, but I debone it once it is cooked. Mony used to be weary of the head but now he's used to it. I think a whole fish is beautiful...and tasty!
