keepin' up with the jones'

With our upcoming European adventure, we've been trying to trim down to blend in more easily with those athletic Europeans. At the end of June, we'll be visiting Portugal, Spain and Morocco, and with all those beaches, incredible cuisine and great wine, we'll need to be in tip-top shape before we get there.

This past week, we prepared healthy meals that didn't have much blog value, so we've taken a little break from the posts. But tonight's meal was definitely one to write home about. Pork loin grilled to perfection. Juicy, flavourful and just plain good.

We marinated the loin in a blend of dijon mustard, extra virgin olive oil, fresh rosemary, chili powder, and plenty of salt and pepper. As for the grilling, all it took was about 4 minutes at high heat on all sides for a total of about 15 minutes. To ensure it was perfectly cooked, you want the loin to give just a little bit when squeezed with tongs and you need to let it rest for about 5 minutes with a piece of foil on top once it's off the grill.

With food this good, it should be a breeze to shed some pounds and be mistaken for Brad & Angelina during our summer vacation.
