I'll keep this quick.....just like tonight's dinner. After a day of errands and Passover cooking it was nice to make a simple yet delicious dinner.
We had farfalle with a spicy tomato sauce. The sauce was made with olive oil, a lot of garlic, shallots, chili flakes, and a tin of italian plum tomatoes. Simmered with some red wine and fresh parsley, this really hit the spot for a relaxing Sunday dinner. The bow tie pasta was cooked al dente and then finished off in the pan with the sauce. This method really helped capture the flavour with every bite. Topped with a snowfall of fresh parmesan, it was the perfect pre-Passover dinner. Can you tell that we're packing in the starches now so that we survive 8 days without it??
