best chicken ever

If you make anything from this blog, let it be this chicken. Tonight's dinner was so good that there are no words to describe how delicious this actually was...but I'll try my best.

We started with a whole chicken that we butterflied by taking out the backbone and flattening it. Once the chicken was cut and rinsed clean, it was rubbed in a mixture of olive oil, paprika, oregano, and salt and pepper. As an added bonus, I rubbed the garlic scape pesto under the skin for a pungent touch, but if you don't have that you can use chopped garlic just as well.

Once marinated for a few hours, bbq the chicken, skin side down on medium-low. Be careful as you may have flare ups from the olive oil...keep a close eye on the grill. The chicken will take about a half hour to cook thoroughly, with a flip at the 15 minute mark. I also put some halved lemons on the grill to baste the chicken with. The grilled lemons release a lot more juice and have a deeper, sweeter flavour.

Okay, now here is the secret to a really great chicken...
Listen carefully...
In a small bowl, make a mixture of lemon juice, olive oil, parsley, and S&P. Heat it in the microwave for 30 seconds. Once the chicken is done, pull it off the grill and pour this olive oil/lemon juice mixture over the chicken. The heat from the chicken will absorb this vinaigrette and will be bursting with flavour. If you don't believe me, try it once and you'll want to cook your chicken this way all the time. I promise.

Made it and loved it. Will make it again soon. It took almost an hour to cook. Used a meat thermometer.

I made this tonight with chicken breast. I baked it with aluminum foil over the top of a glass pan @ 350 for 30 minutes then drizzled the lemon olice oil on top. Oh wow this is so good! I am so glad this came up when I googled Best chicken recipe. I have leftovers and hope my husband doesnt grab them for his lunch before I can!
